  Oreo Muffins (Oreo 小松 饼 )   材料: (1 人份量 , 約 3 塊份量 ) 雞蛋 …………………………… 1 隻   牛奶 ………………………… ....10g 砂糖 …………………………… 10g 低筋麵粉 …………………… ....15g 泡打粉 (baking powder) …… .......1g 雲呢拿香油 ……………… .. 半茶匙   白醋 ……………………… .. 半茶匙   糖霜 (icing sugar) ………… ...... 適量   楓糖漿 / 蜜糖 ……………… ..... 適量   1) 預備雞蛋、牛奶、砂糖、低筋麵粉及泡打粉 5 種材料。  2) 把雞蛋的蛋白及蛋黃分開置於不同的容器內。  3) 把蛋黃打勻,倒入牛奶拌勻。  4) 把低筋麵粉及泡打粉過篩,與蛋奶液拌勻,成為麵糊。  5) 準備做蛋白糖霜,先打散蛋白,用電動打蛋器把蛋白打至起泡狀,直至半凝固狀態,分 2 次倒入砂糖打勻  6) 加入白醋、雪呢拿香油打勻至企身。   白醋有助令蛋白糖霜更挺身。  7) 先把 1/3 的蛋白糖霜與麵糊用切拌法 (folding) 拌勻  8) 再將拌好的麵糊倒入餘下的蛋白糖霜內拌勻,必須輕力拌入,數下即可,不要拌得太久,也避免用攪拌 (stir) 的方式,否則空氣容易流失,影響 pancake 的高度。  9) 預熱平底鑊,平均地掃上食油,以防黏鍋。  10) 轉小火,倒入麵糊,分為 3 份。  11) 倒入約 1 湯匙的水,加蓋以蒸焗方法煮 4-5 分鐘。  12) 開蓋把班戟反轉另一面,再加蓋煮 2-3 分鐘。  13) 上碟,平均地灑上糖霜、楓糖漿、甜忌廉,即成。
